2/2/2021 0 Comments "Bun"derful!My first attempt at making buns went "bun"derfully! Well... kind of... Let's start from the beginning. Ok. So, back in March 2020, when the whole world was in lockdown due to Covid-19, I saw an influencer I follow on Instagram post her homemade bun recipe. Kiteen told her followers that they were a family favourite and wanted to share the recipe with her followers. Let me refresh your memory, the recipe was shared when everyone was stuck inside and turned to baking as an outlet. People were making banana bread and whipped coffee like there was no tomorrow. In our city, there was actually a shortage of baking ingredients (check out this article if you some how forgot ;)) Anyway, when Kiteen released this recipe, I quickly saved it and was planning on getting the yeast and flour I needed for it on our next outing (we were only able to leave once a week for groceries). Except, due to the baking shortage, I was unable to get my hands on some yeast, flour, and toilet paper (that's a story for another time hehe). But, once the first wave of Covid-19 slowed down, I was more worried about spending my time outside and appreciate not being stuck in the house so the recipe was put on the back burner. It is safe to say, I have had this bun recipe saved on my phone for quite some time now. When EDTC 300 #learningproject began, I knew I needed to add homemade buns to my list (I NEEDED to try this loved recipe). So, thats exactly what I did. This is the recipe I used and all the credit goes to Kiteen: Fast forward to this week when I attempted to make these buns. I figured since I made homemade loaves of bread last week, I could make some homemade buns this week - seems like a good progression to me. This recipe was very clear and easy to follow. Everything went smoothly until it was time to shape the buns. I didn't take pictures of my process because my hands were COVERED in dough. The dough was SO SO SO SO sticky. I knew something was up when I couldn't even shape a bun. I had to clean off my hands and search what to do next. I found this video helpful: I eventually was able to form my buns into bun-looking shapes. I sprinkled them with some "everything but the bagel" seasoning and plopped them into the oven. And they came out BUN-derful (Check out those pics below)!!!! I am still not exactly sure where I went wrong with the sticky dough. But other than that stickiness, I would highly suggest everyone trying this recipe. They are delicious and the recipe makes a few dozen (my freezer is filled with buns now- not mad about it). 2/2/2021 0 Comments I "Loaf" ITMy first experience working with bread dough is in the books - and I LOAVED it. Today, I made two loaves of plain- Jane, white bread. Since this was my first time making bread, I wanted to keep it pretty simple. I used a recipe I found on Google and surprisingly, it turned out great. I've always been a bit skeptical about using "random" recipes I find on Google or Pinterest because we all know or have seen "Pinterest Fails" LOL. I really had no choice but to use this recipe since no one in my family or friend group could suggest a tried and true recipe. Thankfully, the bread came out of the oven looking like loaves and not pancakes. And better yet, they tasted pretty yummy! My partner and I made a toasted peanut butter and honey treat to try it out (we ate it too quickly to snap a pic)! I gave my Mom and Dad the other loaf, and they said it tasted "fantastic". *Below I've shared the recipe I used. If anyone has a bread recipe they love and are willing to share, please leave them in the comments and thank you in advance! :) Some obstacles I came across while making dough in my KitchenAid Stand Mixer (AKA Betty): - I had to learn how my new gadget actually even worked-I played around with the different speeds, lifting the head, locking it, etc. - I had to use the correct attachments (for this recipe I used the "Bread Hook") - YEAST. I bought Quick Rise Yeast, but I needed Active Dry Yeast for this recipe- whoops! A quick grocery run to grab the correct kind fixed that obstacle. - I didn't have a thermometer to check the temperature of the water (it was a bit of a guessing game...). I have bought one for the next recipe though, so that should help! - Note to self: let the bread cool before putting it into the bag... it got a little bit soggy due to me being impatient and not letting it cool down enough... Next time: - I would like to try sprinkling some flavour seasoning into the dough (as it was a tad bland) - Try using a recipe that uses whole-wheat flour. Overall I would give this experience, taste and appearance a 7/10. Next up, homemade buns! Ps. Categories2/2/2021 0 Comments Let's "Dough" This This year for Christmas my partner gave me an Artisan Series 5-Quart Tilt-Head Stand Mixer (it's very fancy-shmancy). When I opened up the KitchenAid stand mixer Christmas morning, it was like love at first sight. I have ALWAYS wanted one of these. When I was a little girl, I used to bake with my Amma (Amma means Grandma in Icelandic) in her kitchen using her stand mixer. Now that I have one of my own, it just feels so special. In the last three-ish years, I have been exploring more and more with my cooking and baking skills. I actually love to try new recipes and make food for my family and friends. Now with Covid-19 restrictions, it has been a lot trickier to do so. But now is the perfect time to practice so when life goes "back to normal", I can invite people over for a visit and a tasty treat. When EDTC 300 suggested a #learningproject, I instantly knew this could be my chance to explore my new gadget. The focus throughout the #learningproject will be on different types of doughs. I am going to be playing with different types of dough and breads such as: buns, pastries, pie crusts, bagels, cinnamon buns, etc. My very first part-time job was working at Orange Boot Bakery (if you know, you know). Orange Boot Bakery was a local bake shop here in Regina, SK. They would make fresh, delicious, hand crafted breads and sweets. My all-time favourite was the Birdseed bread- YUM. So, I am thinking I would like my end goal to be a sourdough loaf since the Birdseed was 1/2 sourdough and 1/2 wheat flour. I have zero knowledge in the sourdough department, all I know is that I need a starter and have to feed it (?!) - it's starting to sound like a child or something ;). Once I've researched enough and feel confident in my sourdough knowledge, I, hopefully, (fingers-crossed) will make a sourdough loaf of bread, in hopes of creating a copycat version of the oh-so-loved, Birdseed bread. My game plan: start simple, progress to more difficult recipes. In order to do so, I am going to be using Podcasts. Mark Dyck, the owner of Orange Boot Bakery, has a podcast called Rise Up! I'd like to listen to him, as I know he is incredibly talented and I know I will learn from him. I also did a quick search and found another Podcast called, The Sourdough Podcast, which I am wanting to listen to as well. Along with Podcasts, I would like to connect with the community and reach out to other bakers I know of and see if I am able to learn from them. I know there are lots of Youtube channels that share information as well. I can turn to Bake with Jake on Youtube for help and guidance as well as other social media outlets. I follow many bakers on Instagram and TikTok which may come in handy too. If anyone has suggestions or has made sourdough before, please share! :) That's is all for now. -H. If I was being completely honest, I have always wanted to be a blogger. I love to write and share. But there has always been one thing holding me back... I am NOT tech-savvy. I nanny for a family, and the seven year old is always showing me how to turn on their TV so we can search GoNoodle's. So, if that tells you anything, I am in great need to learn from this course and improve and expand my technology use in the classroom and add more digital resources to my "future-teacher" list! I've written a little "About Me" already on my blog where you can learn more about me and my interests. In short, I am a third year education student at the University of Regina. I am absolutely thrilled to hear that I will be in the classroom come March for my pre-internship (YIPEE)! Besides being a full time student, I nanny, tutor, sub as an Educational Assistant, and coach gymnastics for toddlers (it is legitimately the sweetest job, I get to teach little ones how to tumble, jump and swing). I am also a big Pinterest gal, I have so many boards with home, food, life, teaching and everyday inspiration. My partner and I are currently DIY-ing our house, it has been so fun... well, maybe not so much for him ;) but Pinterest has been our best friend throughout the process. I am also extremely close to my family and am a firm believer that family ALWAYS comes first. I have a Mom and Dad and one older brother (and a five pound pup, named Freddy). My parents are both teachers and have been for over 23 years (talk about rockstars!!). My parents always joke and say I grew up in a school/classroom since I was always at either my Mom or Dad's school on the weekends, as they were both actively involved in their school community. I would have to say I was influenced by them to take the education route in university and I am SO glad I never turned back. I 100% know this is where I am supposed to be in life and I just can't wait to see where teaching takes me! Join me on this journey. -H. Categories |
